Not only do sunflowers majestically entertain us above ground, they also attract numerous other beneficial insects onto the land and the bees love them. But below ground is where the magic happens. On the farm we use sunflowers as a cover crop to rest the soil and their deep, robust root system allows them to scavenge nutrients, enhance mycorrhizal fungal growth and aerate the soil. Happy all round! The saying "As above, so below" couldn't be truer.
