I enjoy the challenge of coaxing these Yacon tubers from the ground. Too much force and they snap and their juicy interiors become exposed. Originating from South American they are often referred to as a ground apple or pear. Yacon have a crunchy and juicy texture with health benefits being attributed to its pre-biotic properties.
